SLOW FOOD EVENTS in Herefordshire,
Worcestershire, Shropshire and the Marches
Terra Madre Dinner – Served at Lower Buckton
Country House
Saturday 17 November 2007

Menu devised and cooked by Terra Madre Chef, Carolyn Chesshire
Fizz – served with Tyrrells’ mixed roots and Clunbury Hall
organic smoked salmon on Swift’s Shropshire Brown bread with
Dairyhouse un-salted butter
Starter – San Daniele air-dried ham from Italy and kindly
donated by Slow Food International served with Liz Lloyd’s
special spiced plums
Bread - Lower Buckton’s soda bread and Swift’s organic sunflower
and seed
Inter-course – Indian spiced butternut soup with horseradish
cream (made to Lesley Mackley’s recipe)
Mains – Squire Farm, Chapel Lawn mutton with pearl barley –
based on a recipe by Ben Weatherall who’s a Slow Food member and
founder member of the Mutton Renaissance. Other ingredients
are:- Buckton field potatoes, Lower Buckton’s onions, leeks and
garlic, Worcestershire celeriac and swede.
Vegetables – Lower Buckton’s pumpkin, chilli & garlic roasted
with Shropshire Oil’s rapeseed and Presidium Jiloca saffron from
Spain; steamed curly kale and carrot mash
Pre-pudding – Butford Farm Presidium Perry Jelly set with Lower
Buckton blackberries and Tillington Court autumn raspberries
served with Pixley Court blackcurrant ice cream – based on
recipes by Mark Hix
Cheese – Mousetrap Cheese’s unpasturised cows’ milk Monkland,
Neals Yard Creamery Ragstone and a selection of Mrs Temple’s
cheeses from Norfolk (donated by Stephen and Catherine Temple)
all served with Lower Buckton’s homemade dill oatcakes, quince
jelly and hazelnuts plus Ludlow walnuts
Pudding – Herefordshire pear and ginger upside down tart and
poached pears in quince Welsh vodka and Presidium Mananara
vanilla from Madagascar with Dairyhouse organic Jersey cream and
Lower Buckton red fruit syrup
Savoury – Handmade petite pate de Pezenas. Based on the special
little pies sold in the bakeries of Pezenas, south west France
where Clive of India lived for a while and reputedly is cooks
invented them.
Coffee and Tea – Lavazza ground coffee, Yorkshire leaf tea and
Teme river-mint infusion ~ Mawley Town Farm Milk, Ludlow –
non-homogenised!
Sweetmeats – Ginger, chocolate and fruit meringues scented with
Lower Buckton’s lavender.

Slow Brunch at Ludford House. On Sunday 3
September over 100 members and guests of the Slow Food Ludlow
Marches convivium enjoyed a delicious and leisurely brunch at tables
laid out in the gardens of Ludford House. A lavish choice of food
and drink included bacon and sausages, kedgeree, salads of seasonal
vegetables, apple juices and plums, all sourced from local
producers. As well as taking the chance to look round the grounds
many visitors, especially the children, also tried their hand at
traditional garden games like archery and croquet.
The event was organised by Slow Food committee member Carolyn
Chesshire, who also did most of the cooking. Carolyn, from Lower
Buckton Country House, a member of the ‘Local to Ludlow’ Bed and
Breakfast group, believes passionately in using local produce and
spreading the word to others about the quality and variety of what
is available in the Marches

Carolyn was honoured to be one of 30 Cooks
representing the UK at Slow Food International's Terra Madre which was
held in conjunction with Slow Food International's Salone del Gusto in
Turin in October 2006.

In Turin at the Slow Food Terra Madre's
"Cooks in Food Systems" assembly on Sunday 29th October,
London-based Italian chef and wild-foods expert forager, Claudio
Bincoletto and Swedish chef, Sofia Gulliksson called upon the
world's cooks and chefs to unite on one day to promote the knowledge
and to spread the values of Slow Food to others who may not be aware
of its objectives. They called upon 11th November to be SLOW FOOD
IN ACTION DAY
In response to this challenge Henry and Carolyn served the following
